Serving

1

Ingredients

3 large eggs, boiled to preference (soft, medium, or hard)

2 oz wild-caught smoked salmon

½ ripe avocado, sliced or mashed

2 red radishes, thinly sliced

½ fresh lemon (for squeezing)

1 thick slice high-fiber artisan bread (such as homemade Chia Seed Bread or sourdough)

1 tablespoon premium Extra Virgin Olive Oil (EVOO)

½ teaspoon ground turmeric

1 pinch freshly cracked black pepper (essential for activation)

1 pinch sea salt

1 tablespoon raw hemp seeds or pumpkin seeds (pepitas)

Optional garnish: Fresh lemon squeeze, fresh dill, or microgreens

APPROX. Timing

Preparation time: 5 minutes

Cooking time: 8–10 minutes (for boiling eggs and toasting)

Instructions

Boil the Eggs: Bring a small saucepan of water to a rolling boil. Carefully lower in the 3 large eggs. Boil for 6–7 minutes for soft/jammy yolks, or 9–10 minutes for hard-boiled yolks. Transfer immediately to an ice bath, let cool briefly, peel, and cut into halves.

Toast and Layer: Toast your slice of high-fiber bread to your desired crispness. Spread the sliced or mashed avocado evenly over the warm toast.

Add the Protein & Crisp Radishes: Layer the smoked salmon ribbons over the avocado base, then tuck in thinly sliced crisp radishes around and over the salmon. Arrange the halved boiled eggs neatly on top or right alongside the toast.

Infuse with Golden Spices: In a small bowl or liquid spoon, whisk the extra virgin olive oil, ground turmeric, cracked black pepper, and sea salt. Drizzle the golden oil generously over the eggs and salmon.

Brighten & Garnish: Give the entire toast a generous squeeze of fresh lemon juice. Sprinkle raw hemp seeds or pumpkin seeds over the top for an extra nutrient boost and crunch, garnish with fresh dill if desired, and enjoy immediately!

Tips and Variations

Cottage cheese protein boost: For an extra high-protein swap or addition, spread ¼ cup of low-fat cottage cheese directly onto your toast before adding the avocado, or serve ½ cup of cottage cheese as a creamy side! It adds an extra 12–14g of pure, slow-digesting protein (casein) alongside essential calcium.

The golden absorption rule: Never skip the black pepper! Black pepper contains piperine, a compound that boosts your body’s absorption of turmeric’s anti-inflammatory curcumin by up to 2,000%. Pairing it with the healthy fats in olive oil and avocado ensures complete fat-soluble nutrient uptake.

Peppery radish crunch: Slicing the radishes paper-thin adds a refreshing, peppery crunch that cuts through the rich, buttery textures of the avocado and salmon.

Lemon synergy: The squeeze of fresh lemon juice not only cuts through the rich healthy fats to elevate flavor, but its natural Vitamin C dramatically boosts your body's absorption of plant-based iron from the seeds and greens!

Meal prep efficiency: Soft- or hard-boil a batch of eggs during your weekend prep and keep them unpeeled in the fridge for up to 5 days. Assembly will take under 3 minutes on busy weekday mornings!

Greens upgrade: Place a handful of fresh arugula, baby spinach, or microgreens between the avocado and smoked salmon for an added dose of folate, iron, and fresh peppery flavor.

Bread-free option: If you are following a grain-free or keto lifestyle, swap the toast base for a bed of warm steamed kale or fresh baby spinach, or use two thick slices of grilled Portobello mushroom caps.

Ingredients’ Goodness

Eggs: A complete protein powerhouse supplying all nine essential amino acids necessary for muscle repair and satiety. Eggs are rich in choline for cognitive function and memory, alongside lutein and zeaxanthin for eye protection.

Smoked Salmon: Provides high-quality lean protein and a rich dose of long-chain omega-3 fatty acids (EPA and DHA). These essential fats help reduce systemic inflammation, lower cardiovascular risk, and enhance brain health.

Avocado: Packed with heart-healthy monounsaturated fats that lower "bad" LDL cholesterol while supporting long-lasting fullness. Avocados offer a rich source of potassium and dietary fiber, dramatically improving the absorption of fat-soluble nutrients across the entire meal.

Cottage Cheese: Rich in complete casein protein, which digests slowly to provide a steady, long-lasting release of amino acids for muscle maintenance. It is also packed with bone-strengthening calcium, phosphorus, and gut-friendly cultures.

Radish: Hydrating, low-calorie cruciferous vegetables packed with glucosinolates—sulfur-containing compounds that support liver detoxification and digestive health. Radishes contribute natural Vitamin C and a fresh, peppery crunch that helps stimulate digestion.

Lemon: Delivers a bright burst of fresh flavor and a potent dose of Vitamin C, a powerful antioxidant that supports collagen production, aids skin health, and enhances iron absorption from surrounding seeds and whole grains.

Extra Virgin Olive Oil: A cornerstone of Mediterranean wellness rich in oleic acid and potent polyphenols. It supports cardiovascular function, protects vascular health, and serves as the perfect healthy lipid carrier for turmeric.

Turmeric: Contains curcumin, a potent bioactive compound known for its strong antioxidant and anti-inflammatory properties that help combat oxidative stress and support joint and metabolic health.

Black Pepper: Contains piperine, an active alkaloid that enhances gastrointestinal nutrient absorption and dramatically amplifies the bioavailability of curcumin in turmeric.

Hemp & Pumpkin Seeds: Nutrient-dense seeds that provide clean plant protein, essential minerals like magnesium and zinc for immune and hormone balance, and a satisfying, wholesome crunch.
