1 tablespoon pure honey (or maple syrup)

½ teaspoon pure vanilla extract

For the Creamy Yogurt Layer:

1 cup plain non-fat or low-fat Greek yogurt

1 tablespoon pure honey (or maple syrup)

½ teaspoon pure vanilla extract

For the Fresh Berry Layer:

½ cup fresh strawberries, thinly sliced

½ cup fresh blueberries or raspberries

For Assembly & Dusting:

1 tablespoon of unsweetened raw organic cacao nibs (or finely ground whole raw cacao beans)

1 tablespoon fine dark chocolate shavings (70%+ cacao)

APPROX. Timing

Preparation time: 10 minutes

Chilling time: 4 hours (or overnight)

Instructions

Prepare the Coffee Chia Layer: In a small glass bowl or liquid measuring cup, whisk together the chia seeds, cooled espresso (or strong coffee), 1 tablespoon of honey, and ½ teaspoon of vanilla extract until well combined. Let the mixture sit for 5 to 10 minutes, then give it another good whisk to break up any settling seeds. Cover and refrigerate for at least 4 hours (or overnight) until the chia seeds absorb the liquid and thicken into a pudding consistency.

Prepare the Cream Layer: In a separate small mixing bowl, whisk together the Greek yogurt, 1 tablespoon of honey, and ½ teaspoon of vanilla extract until completely smooth, silky, and creamy.

Assemble the Berry Parfaits: Prepare two small glass jars or dessert glasses. Spoon half of the espresso chia pudding into the bottom of each glass to form the base layer. Add a layer of sliced fresh strawberries and mixed berries, followed by half of the sweetened Greek yogurt mixture. Repeat with a second layer of espresso chia pudding, remaining berries, and finish with a smooth top layer of Greek yogurt.

Dust and Serve: Right before serving, use a fine-mesh sieve to dust the top of each parfait generously with raw dark cacao powder. Top with fine dark chocolate shavings for an extra antioxidant-rich crunch, and enjoy chilled.

Tips and Variations

Best enjoyed for breakfast or midday snack: Because of the natural caffeine content from the brewed espresso, this recipe is best enjoyed as an energizing morning breakfast or a midday pick-me-up rather than a late-night dessert. Eating it earlier in the day ensures you get sustained focus without interfering with your evening sleep quality.

Decaf adaptation: If you are too sensitive to caffeine but enjoy coffee, simply swap the traditional espresso for high-quality decaf espresso or decaf cold brew concentrate to eliminate the caffeine.

Meal prep champion: Make a double batch in small mason jars on Sunday evening. They store perfectly in the refrigerator for up to 3 to 4 days. Store extra fresh berry toppings on top or separately to keep them firm and juicy.

Ingredients’ Goodness

Chia Seeds: A true nutritional powerhouse packed with soluble fiber, plant-based protein, and essential omega-3 fatty acids (ALA). When soaked, chia seeds expand to form a gel that slows digestion, promotes gut health, and keeps blood sugar levels steady.

Greek Yogurt: Rich in high-quality, complete protein that aids in muscle recovery, metabolic health, and long-lasting satiety. It is also loaded with natural probiotics that feed beneficial gut microbes to support digestive wellness and immune function.

Strawberries & Berries: Abundant in Vitamin C, manganese, and potent anthocyanin antioxidants. Fresh berries add natural sweetness and dietary fiber while helping lower cellular inflammation and promoting vibrant skin health.

Espresso / Coffee: A robust source of dietary antioxidants and polyphenols, particularly chlorogenic acids, which help fight oxidative stress and support vascular health. The natural caffeine provides a clean mental boost and enhanced morning focus.

Dark Cacao beans: Unprocessed raw dark cacao is one of the highest plant sources of magnesium, iron, and cardiovascular-supporting flavanols. It supports healthy blood flow, lowers systemic inflammation, and improves mood through the release of natural endorphins without added refined sugars.

Dark Chocolate Shavings (70%+): High-cacao dark chocolate provides an additional layer of heart-healthy polyphenols and healthy fats, giving the dessert a rich texture and deeper chocolate note that naturally satisfies cravings.

Honey: Contains natural enzymes, antioxidants, and trace minerals. Unrefined honey acts as a gentle, natural sweetener that provides a quick source of clean energy without the sharp spikes caused by artificial sweeteners or refined sugar.

Vanilla Extract: Adds depth, warmth, and natural sweetness to the cream layer without any additional calories, helping to balance the rich flavor of the dark cacao and espresso.
